Husband and wife team Chris Haslam and Leigh Clark are breathing new life into one of the region’s oldest pubs.
The local couple founded Mosaik Brewing at The Fintry Inn in June 2022, beginning a new chapter in the pub’s 272 year history.
Leigh said: “The Fintry Inn closed in 2020 and we were given the opportunity to take over and refurbish the pub.
“This was our chance to do we what we had always dreamed of; to brew and sell our own beer, in our own pub, as well as showcase the other amazing craft breweries that are out there.
“While we wanted to honour the history of the pub, which sold it’s first drink in the 1700s, we wanted to bring it up to date and offer something a bit different to the usual country pub experience.
“A pub is such an important hub for any community and it has been amazing to see how excited everyone is about the pub opening again. It is a real privilege to be part of the pub’s history and the atmosphere in the place when we opened was just incredible to be a part of.”
The new microbrewery brings together Chris and Leigh’s two passions, beer and travel.
Leigh explained: “We love to discover new places and every adventure we have always centres around the beers and drinking culture of that area.
“A love of creating something out of nothing along with our passion for beer inevitably led us to start making beers of our own.
“We aim to combine everything that we love and are inspired by through Mosaik – great quality, drinkable beers, many with a hint of the exotic flavours that we enjoy so much.
“This is followed through in our branding and recent refurbishment of The Fintry Inn – we’ve used bold colours and patterns inspired by our travels.”
The couple’s plans for pub food are equally ambitious, having recently taken on Masterchef 2021 contestant Lisa Addison as their head chef.
Leigh said: “We’re so excited to bring something a bit different to the area; aiming to inspire local palates through dishes influenced by our travels, with plenty of spice and interesting flavours!
“We’ll also be hosting pop-up pizza nights.
“As our business grows we’ll start offering more events such as brewery tours, gin and wine tastings, pub quizzes and live music.

If all that wasn’t enough, The Fintry Inn extends a warm welcome to four legged friends.
Leigh added: “Dogs are welcome in the pub – in fact our own fluffy pooch Yuki the Chow Chow will be a regular pub fixture. We have a beer garden for enjoying a drink while soaking up the rare Scottish sunshine and we also have a wood burning stove to cosy up by when the colder months set in.”
